(step 3): Simmer the Curry
Pour in the second can of coconut milk, water or beef broth, fish sauce, tamarind paste, and palm sugar. Add the cinnamon stick, star anise, bay leaves, and cardamom pods. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for at least 1 hour, or until the beef is very tender.
4 (step 4): Add Potatoes and Onion
After the beef has cooked for 1 hour, add the cubed potatoes and chopped onion to the pot. Stir gently to combine.
5 (step 5): Finish and Garnish
Continue to simmer, uncovered, for another 20-30 minutes, or until the potatoes are cooked through and the sauce has thickened. Before serving, stir in the roasted peanuts. Garnish with fresh cilantro and sliced red chilies if desired. Serve immediately with warm jasmine rice.
